Growing up, we would call boxed macaroni and cheese “Yellow Death”. It didn’t matter if it was brand name of an off brand. If if came with the powder cheese mix, it was Yellow Death and mom wouldn’t buy it.
As I got older I learned to make homemade cheese sauce. Melt butter, add flour, add milk but don’t burn it, mix in cheese and voila! Poor over pasta for homemade macaroni and cheese. While this a great alternative to Yellow Death, the sauce takes some time to make and on top of that, my 4 year old doesn’t like it. I had given up on trying to get her to eat it until recently.
My church has a system in place to help those who are struggling financially get groceries. They are given a list of options to fill out and turn in, then they pick up their order a few days later. I have been working on creating as many recipes as I can exclusively with the items on the list to help the families and individuals deal with limited ingredients. One of the recipes is Easy Peasy Mac and Cheesy.
I am so happy with the recipe and an added bonus, R loves it!! Better yet, it only uses THREE INGREDIENTS!!! Elbow macaroni, cheese, and sour cream. That’s it! Here is how you make it:
Start by cooking 2 cups (8 oz) raw pasta according to the box directions. While the pasta cooks, measure out 2 cups (4 oz) grated cheese and 1/2 cup of sour cream. As soon as you drain the pasta, dump it back into the pot and mix in the cheese and sour cream. You can put the pot back on the burner for additional heat while mixing but you don’t need to turn on the burner if you mix in the cheese and sour cream right away. Once it is mixed, it’s done. I like to put salt and pepper on mine.
